We know everyone needs a helping hand at the moment, which is why 20 lucky winners could each be walking away with a cool £50 to spend at the discount retailer.
And with plenty of Jack-O’-Lantern-making on the horizon, it’s a shame to let all those leftovers go to waste – which is why the UK’s fourth-largest supermarket has created five pumpkin-based recipes offering shoppers a tasty way to enjoy seasonal flavours and reduce food waste.
Luke Emery, national sustainability director at Aldi, said: “Halloween is a much-loved celebration for many of our customers, yet we know that many people aren’t sure how to make use of the tasty pumpkin flesh they remove during carving. We hope these recipes will inspire our customers to transform their pumpkin leftovers into delicious dishes, instead of letting them go to waste.”
From the rich, comforting flavours of a creamy Thai coconut pumpkin soup to the sweet indulgence of pumpkin muffins, these food ideas are guaranteed crowd-pleasers that will have everyone coming back for seconds.
Recipe #1 – Pumpkin Katsu Burgers with Fresh Lime Slaw –

Putting a twist on the traditional Japanese recipe, these burgers combine pumpkin with coconut and spices to create a tasty weeknight tea.
Recipe #2 – Thai Coconut Pumpkin Soup – serves two
There’s nothing more warming than a hearty soup when the temperature starts to drop outside – and this Thai coconut recipe will not leave you disappointed.
