Gen Z ditch fried eggs in favour of bathing them in espresso and lime juice

Younger Brits are shunning traditional ways of eating eggs, instead opting for more out-there techniques, including curing their eggs overnight in soy sauce

Poached and fried eggs are getting panned by Gen Z as they turn their backs on the classic fry-up. Younger food fans are scrambling traditional methods for raw, cured or barely-there eggs – chucking them in coffee, bathing them in lime juice or mixing them with feta.

Almost half are happy to eat uncooked or runny eggs, with 66% reckoning their parents’ generation was far too fussy.

TikTok is fuelling the shift, with global recipes shaking up the breakfast staple.

Some are curing eggs overnight in soy, Worcestershire or miso to firm up the yolks – a process that “transforms it into a firm, grateable and almost cheesy umami bomb”, according to egg expert Rachel Perlmutter.

Others simply pour raw yolks over rice. One sceptic commented: “Eugh, salmonella!”.

But UK eggs are now considered safe to eat raw – even for pregnant women, infants and the elderly, according to a British Lion Eggs spokesperson.

They said: “Food is a path to global exploration. The advent of social media means finding and trying new recipes is even easier.

“Modern Brits are increasingly embracing the endless and exciting ways they find eggs served online. We always recommend that shoppers look for the British Lion mark.”

Another rising trend is the ‘cajun egg boil’.

Food writer Lauren Habermehl said: “An egg boil is a super quick and easy TikTok recipe featuring jammy, soft-boiled eggs bathed in a rich, buttery sauce that’s jam-packed with flavor.

“The recipe was born out of the onion boil trend and uses a very similar sauce seasoned with a plethora of dried herbs and spices.”

The exact recipe varies between creators, but one of the most popular ones recommends a blend of garlic, onion powder, lemon pepper, paprika, cajun seasoning, chili powder, brown sugar, minced garlic and lemon juice.
