Scrambled eggs are typically made by stirring, whipping or beating eggs over a low heat until they form curds.

While scrambled eggs can usually be whipped up with minimal ingredients, additional items such as chives, cream, sour cream and cheese can be incorporated for extra flavour. The most delectable scrambled eggs are creamy and tender, pairing perfectly with buttery toast and crispy bacon.

My go-to recipe for scrambled eggs is quite simple, involving just butter, eggs and a dash of milk. However, as an avid egg fan, I recently decided to experiment with a new recipe that incorporates an unexpected ingredient – mayonnaise, reports the Express.

The inclusion of mayonnaise in the mix results in exceptionally creamy scrambled eggs with a delightful richness.

I seasoned my eggs with salt and pepper, but you could easily incorporate chives or other herbs for an added kick of flavour.

I introduced the mayonnaise when the eggs were just beginning to curdle in the pan, although it could also be whisked into the eggs before cooking.

Here’s how to make scrambled eggs with mayonnaise:

Ingredients:

  • One tbsp of high-quality mayonnaise (I used Hellmann’s)
  • Two or three eggs
  • A splash of milk
  • Salt and pepper for seasoning
  • One tbsp butter (or equivalent) or 1.5 tablespoons of oil

Method

1. Begin by whisking the eggs and a splash of milk in a bowl or jug.

Heat a non-stick frying pan over medium heat and add the butter, ensuring it doesn’t burn.

2. Pour the eggs into the frying pan and stir frequently.

I utilised a spatula for this, but a wooden spoon would work just as well.

3. Continue to stir the eggs until curds begin to form.

Incorporate the mayonnaise, ensuring it is fully mixed with the egg mixture. Season to taste with salt and pepper.

4. Keep stirring until the eggs achieve your preferred consistency.

While I favour a slightly runny texture, others might prefer their eggs more firm.

5. Serve the eggs as they are or on toast accompanied by crispy streaky bacon.
